What you need for Mori Matcha Mochi
Key Ingredients:
- Mochiko (sweet rice flour): 1 cup
- Granulated sugar: 1/4 cup
- Mori Ukifune Matcha powder: 1 tablespoon (adjust for desired intensity)
- Water: 1 cup
For Dusting & Handling:
- Potato starch or cornstarch: ample amount for dusting
Preparing Mori Matcha Mochi
Step 1: Prepare the Mochi Dough (3 minutes)
In a microwave-safe bowl, whisk together the mochiko, granulated sugar, and 1 tablespoon of Mori Ukifune Matcha powder until thoroughly combined. Gradually add the water, stirring until you achieve a smooth, lump-free mixture.
Step 2: Cook the Mochi Dough (2 minutes)
Cover the bowl securely with plastic wrap or a microwave-safe lid. Microwave on high power for 1 minute. Carefully remove the bowl and stir the mixture well. Return it to the microwave and heat for an additional 1 minute. Stir again. The mixture should now be noticeably thick and sticky.
Step 3: Shape the Mochi (5 minutes)
Generously dust a clean work surface and your hands with potato starch or cornstarch. Spoon the hot, sticky mochi dough onto the starched surface. Gently knead the dough for a minute or two until it becomes smoother and more pliable.
Step 4: Forming the Mochi Balls (5 minutes)
Pinch off small portions of the dough (about the size of a walnut). Roll each portion between your starchy hands to form bite-sized balls. Place the formed mochi balls on a plate or tray that has also been lightly dusted with starch to prevent any sticking.
Step 5: Serve and Enjoy (Immediate)
Your Mori Ukifune Matcha Mochi is now ready to be savored! Enjoy them immediately for the softest texture. For a slightly firmer consistency, you can refrigerate them for a short period, but they are best served fresh.
